Honey Thai Sauce
1 cup Honey
1/4 cup Soy Sauce
1 TBSP CHILLI CRISP
1 TBSP GARLIC CHILLI PASTE
2 TSP MINCED GARLIC
STIR CONTENTS IN A LARGE MIXING BOWL. ENSURE IT IS WELL BLENDED.
STORE AT ROOM TEMPERATURE
Serve over , Grilled Chicken, Wings, Pork Loin, Saute’ed or Fried Vegetable

2 Shots of Weedline Rum
2 Shots of St. Germain Liqueur
Sprite
Lime
Mint
Muddle 5 leaves of Mint and 1 lime sliced with 1 cup of crushed ice
pour in the Rum and St. Germain
Shake well and pour over ice split into 2 Chilled high ball glasses
Top glasses off with sprite and stir

Maple Bacon Jam Salmon Bites
A Very tasty appetizer or Small Plate delight
Atlantic or Pacific Salmon
Thick cut Bacon
Maple Bacon & Onion Jam cut
Cut the Salmon into 3 inch square pieces
pre cook the bacon to a soft consistency
Wrap each piece of Salmon Pieces with one piece of Bacon
use a toothpick to hold the bacon around the Salmon
Place on a cooking stone
Place 1 TBSP of Maple Bacon Jam on each piece of Salmon
On a Grill or in the Broiler cook the Salmon Bites for 15 mins (do not over cook)
Capt. KC's Road Kill Chilli
1 lb Ground Chuck
1 lb Ground Pork
1 lb Ground Venison
1 lb Chorizo Sausage
1 lb Fresh Road Kill (optional)
2 Beers
1 16 oz can of Tomato sauce
1 32 oz can of Fire roasted tomatoes
1/8 cup of favorite Chilli powder or to taste
2 Tbsp Cumin
2 heaping Tbsp minced garlic
2 Chopped Jalapenos (seeds and ribs removed)
1 medium Sweet Onion chopped
2 Bell Peppers chopped (I use red)
In a large cast iron Dutch Oven saute’ chopped vegetables. Add meats and brown, reduce to medium heat and stir in spices and garlic, add Beers. and wait a couple of minutes ( have one yourself) add tomatoes and sauce. reduce heat to low and let simmer for 30 mins ish
Serve with shredded Cheddar Cheese and a dollop of sour cream
Serves approx 12 bowls
